A simple, crowd-pleasing preparation that highlights the rich flavor of fresh Ulua. The garlic butter baste caramelizes beautifully over high heat, creating a crispy skin and moist, flavorful flesh.
Ingredients
- 2 lbs Ulua fillets or steaks
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 2 tbsp fresh lemon juice
- 2 tbsp fresh parsley, chopped
- 1 tsp Hawaiian sea salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Method
- Preheat grill to high heat (450°F+). Pat fish dry and brush with olive oil. Season with salt and pepper.
- Melt butter in a small saucepan. Add garlic and cook 1 minute until fragrant. Remove from heat and add lemon juice and parsley.
- Grill fish 4–5 minutes per side, basting with garlic butter each time you flip.
- Fish is done when it flakes easily with a fork and internal temp reaches 145°F.
- Drizzle remaining garlic butter over fish before serving.
Guide’s tip: For thick Ulua steaks, sear on high heat for 3 minutes per side then move to indirect heat to finish. Don't move the fish until it releases naturally from the grill — this prevents sticking and ensures a good sear.
