  1. Preheat grill to high heat (450°F+). Pat fish dry and brush with olive oil. Season with salt and pepper.
  2. Melt butter in a small saucepan. Add garlic and cook 1 minute until fragrant. Remove from heat and add lemon juice and parsley.
  3. Grill fish 4–5 minutes per side, basting with garlic butter each time you flip.
  4. Fish is done when it flakes easily with a fork and internal temp reaches 145°F.
  5. Drizzle remaining garlic butter over fish before serving.
Guide’s tip: For thick Ulua steaks, sear on high heat for 3 minutes per side then move to indirect heat to finish. Don't move the fish until it releases naturally from the grill — this prevents sticking and ensures a good sear.
