Fresh Mahi-Mahi grilled simply and topped with a vibrant Hawaiian mango salsa. This dish captures the spirit of Big Island cooking — fresh, colorful, and bursting with tropical flavor.

  1. Make the salsa: combine mango, red onion, jalapeño, lime juice, and cilantro. Set aside.
  2. Brush Mahi-Mahi with olive oil, season with salt and pepper.
  3. Grill over high heat 4–5 minutes per side until cooked through.
  4. Fold avocado into salsa just before serving.
  5. Plate fish and top generously with mango-avocado salsa.
Guide’s tip: Mahi-Mahi is a lean fish that dries out quickly — do not overcook. It is done when it flakes but still has a slight translucency in the very center. The mango salsa can be made up to 2 hours ahead (without the avocado).
