Fresh Mahi-Mahi grilled simply and topped with a sweet-and-spicy Hawaiian mango salsa. This dish captures the spirit of Big Island cooking: fresh, colorful, and simple.
Ingredients
- 2 lbs Mahi-Mahi fillets
- 2 tbsp olive oil
- 1 tsp Hawaiian sea salt
- 1/2 tsp black pepper
- 1 ripe mango, diced
- 1/2 red onion, finely diced
- 1 jalapeño, minced
- 2 tbsp fresh lime juice
- 1/4 cup fresh cilantro
- 1 avocado, diced
Method
- Make the salsa: combine mango, red onion, jalapeño, lime juice, and cilantro. Set aside.
- Brush Mahi-Mahi with olive oil, season with salt and pepper.
- Grill over high heat 4–5 minutes per side until cooked through.
- Fold avocado into salsa just before serving.
- Plate fish and top generously with mango-avocado salsa.
Guide’s tip: Mahi-Mahi is a lean fish that dries out quickly, so don’t overcook. It is done when it flakes but still has a slight translucency in the very center. The mango salsa can be made up to 2 hours ahead (without the avocado).
