Uku makes exceptional poke — its firm, clean flesh holds up beautifully to the marinade. This classic shoyu preparation is a Big Island staple.

  1. Cube fish into 3/4-inch pieces.
  2. Combine shoyu, sesame oil, and salt. Toss with fish.
  3. Fold in onions, inamona, and ogo if using.
  4. Serve immediately or refrigerate up to 30 minutes.
Guide’s tip: Uku poke benefits from a touch more sesame oil than Ulua poke — its leaner flesh absorbs flavors more readily. Serve over warm rice for a complete meal.
