Uku makes exceptional poke. Its firm, clean flesh holds up beautifully to the marinade. This classic shoyu preparation is a Big Island staple.
Ingredients
- 1 lb fresh Uku, cubed
- 3 tbsp shoyu
- 1 tbsp sesame oil
- 1/4 cup green onion, sliced
- 1/4 cup Maui onion, thinly sliced
- 1 tbsp inamona
- 1 tsp Hawaiian sea salt
- 1/4 cup ogo (limu) seaweed, optional
Method
- Cube fish into 3/4-inch pieces.
- Combine shoyu, sesame oil, and salt. Toss with fish.
- Fold in onions, inamona, and ogo if using.
- Serve immediately or refrigerate up to 30 minutes.
Guide’s tip: Uku poke benefits from a touch more sesame oil than Ulua poke, since its leaner flesh absorbs flavors more readily. Serve over warm rice for a complete meal.
