A traditional Hawaiian poke featuring the sweet, firm flesh of fresh Uhu. The limu (seaweed) and inamona (roasted kukui nut) are the authentic Hawaiian ingredients that make this preparation special.

  1. Cube fish into 3/4-inch pieces.
  2. Season with Hawaiian sea salt and let sit 5 minutes.
  3. Add shoyu, sesame oil, inamona, and onions. Toss gently.
  4. Fold in limu. Taste and adjust salt.
  5. Serve immediately.
Guide’s tip: Uhu has a naturally sweet flavor that pairs beautifully with the nutty inamona. If you cannot find fresh limu, dried ogo seaweed rehydrated in cold water for 10 minutes is a good substitute. This is best eaten the day of the catch.
