A traditional Hawaiian poke featuring the sweet, firm flesh of fresh Uhu. The limu (seaweed) and inamona (roasted kukui nut) are the authentic Hawaiian ingredients that make this preparation special.
Ingredients
- 1 lb fresh Uhu, cubed
- 2 tbsp shoyu
- 1 tsp Hawaiian sea salt
- 1 tbsp inamona (roasted kukui nut)
- 1/4 cup limu kohu or ogo seaweed
- 1/4 cup Maui onion, thinly sliced
- 2 stalks green onion, sliced
- 1 tsp sesame oil
Method
- Cube fish into 3/4-inch pieces.
- Season with Hawaiian sea salt and let sit 5 minutes.
- Add shoyu, sesame oil, inamona, and onions. Toss gently.
- Fold in limu. Taste and adjust salt.
- Serve immediately.
Guide’s tip: Uhu has a naturally sweet flavor that pairs beautifully with the nutty inamona. If you cannot find fresh limu, dried ogo seaweed rehydrated in cold water for 10 minutes is a good substitute. This is best eaten the day of the catch.
